So what is a macaron? The classic French macaron is an elegant pastry. Two biscuits made from a simple blend of sugar, egg whites, and almond flour sandwiched together with either a buttercream, ganache, or jam. These versatile desserts are available in a spectrum of colors and flavors and are currently the jewel of pastry shops across Paris. Although they have been around since the Renaissance, they are only now making their way to the United States.

Moondust Macarons is based out of Providence, RI and was founded by Stephen Fitch, a 2009 graduate of Bryant University. He first encountered the macaron during the summer of 2008 while on a study abroad trip in Paris. Amazed by the enthusiasm and creativity that surrounded the cookie, he left determined to recreate this culinary phenomena back home. Moondust is the product of his efforts.
